Chicken Tortilla Soup

Few things speak to winter nourishment like a simple, yummy chicken soup.


This is my go-to for busy days or I have often taken it to social events because it is so simple and delicious.

You can use cooked chicken but I almost always start with uncooked drumsticks, wings or thighs. This adds a lot of flavour as well. We simply pick out the bones as we are eating.


Chicken Tortilla Soup

4-8 drumsticks, wings or thighs

1 quart broth plus 2 cups water (Can also use just water and add lots of spices, especially if using uncooked chicken)

Spices, such as salt, pepper, chicken seasoning, etc

Garlic and onions as you prefer

2 cups corn, optional

2 cups beans, soaked overnight if you using dry beans

Mix altogether in crockpot, turn on low and let cook all day, till meat is soft. That's it!

Serve with sour cream, grated cheese, and if desired, corn chips or tortillas.


Come home to a yummy soothing soup that is sure to be a pleaser. Our girls love it!
